Carcassonne is a remarkably preserved medieval walled town at 90 km of Toulouse, listed by Unesco as World Heritage site. In the early 13th century, Carcassonne was taken by Simon de Montfort during the Albigensian Crusade, then annexed to the royal estate.Fortification works lasted throughout the 13th century, with the construction of the outer wall and the modernisation of the inner rampart, making this place an impregnable fortress. In the second half of the 19th century, it underwent a major restoration project supervised by Eugène Viollet-le-Duc.

Workshop banquet will take place at the XVIII-th century Orangerie de Rochemontes, 20 minutes far from Toulouse. It is situated in a 10 hectares domain, overlooking the Garonne River. The dinner will be served in a 280 m² room with apparent bricks and wooden frame.
